Salt and Vinegar: Two Extreme Flavors

With these two precious ingredients we enter the dominion of fire. They both are the most pleasant substances in gastronomy, we cannot do without salt, but we do not have to forget that they dry up and burn food. Think of the preservation of food under salt; it is a precious technique, but it will never equal the capacity of the sun in this field. No meat dried under salt will ever have scents and flavors comparable to sun dried meat. No cod under salt will ever compare to fish dried by the air. Also, prosciutto are better when they are produced through adequate ageing, rather than an excess of salt. Salt and vinegar represent the extreme limits in the range of flavors, an analogous extremity, since vinegar also has a salted background flavor. This background flavor is clearly perceived in fish soups with vinegar. In the dish you will not perceive the vinegar, but a salted accent instead.

We use them sparingly

These extreme flavors can be overwhelming to some palates, and to their honor I propose the beef steak with salt and vinegar: grill the meat and dress it with romarin, balsamic aceto, and coarse salt before serving. A good culinary rule of thumb, however, holds that salt and vinegar must be used sparingly. Their flavor should lend strength to a dish, but never dominate it. Too much of either can ruin a meal, so err on the side of caution because you can always add more later. If you feel your dish lacks flavor, use other spices and herbs to help flesh it out.

Salt: fine or coarse

Too often the quality of salt and vinegar are neglected and two different products are assumed to be the same. This is a big mistake. The flavor of salt varies if crude or refined, its yield in a dish varies depending on its grain size. French ocean salt, rather moist, is surely the best one to give flavor to raw dishes, but it is not always easy to find in our stores. To cook instead it is better to use a more refined salt, very dry, since it is saltier and small amounts are enough. On salads less refined salt is recommended.

Salt, a precious good

Salt is one of the most diffused minerals on the planet, but the difficulties connected to supplying it in ancient times, rendered it a precious good to which were attributed symbolic and important meanings. Hospitality, one of the most sacred practices, was made legitimate by the ritual of the partitioning of the salt with the host in all of Mediterranean East, Japan and ancient Greece. Still today it is a widely held belief that spilling salt brings misfortune. A pinch of salt is then thrown over the left shoulder, in order to hit the demons who are behind the back. Vinegar

When speaking of quality, vinegar is the big unknown. The product of wine fermentation, but also of fruit, cereal, malt and honey, vinegar is often made with the poorest raw materials like, for example, wine gone bad. This is a big mistake, especially considering that vinegar is not a necessary food for a balanced diet, but a condiment of pleasant and particular feelings. Therefore it must be of good or excellent quality. It cannot be made with poor wine, since the flavor of the wine remains in the vinegar. Fortunately, some manufacturers have understood it and very good vinegars can be found in the markets. The balsamic vinegars fermented naturally and aged for five years in small barrels of various woods, one for every year of aging; chestnut, cherry, mulberry, ash and often juniper to confer the characteristic scent, are a good example. Other vinegars are based on the extraordinary quality of the starting wine to become true gastronomic wonders. Also interesting are the aromatized vinegars: raspberry, blueberry, apple, scallion, and many the others. To be good these need excellent raw materials, fruits and herbs perfumed, not to be aromatized with extracts, therefore the good ones are relatively expensive. But if you like to use vinegar choose a good bottle, or banish it from your kitchen.

No vinegar on salads

Do not put vinegar on green salad since it cooks it and takes away all of its scent. Abandon this bad habit. Take a tender green salad and season it with a fruity olive oil and you will taste the difference. Vinegar must be used mainly for sauces. Always make it to evaporate well so that the best aroma is felt. In salads vinegar is used when it recalls the flavor of one of the ingredients, as an example only put some drops of a raspberry aromatized vinegar in a salad containing raspberries. Pure acetic acid on a salad or, even worse, on tomatoes that are already acidic in their own right, ruins a gift of nature.

Ultra-portable are very expensive, have extendable battery, power-saving CPUs and integrated graphics.

Thin & Lights:

Medium-sized Laptops:

However, these medium-sized notebooks have relatively less computing power due to their smaller dimensions and longer battery life.

Desktop Replacement Computers:

This edition of notebook computers is chiefly used in a fixed location and not easily portable due to their heavy weight and bulky size. Their screen-size typically measures from 17 to 20 inches. Moreover, desktop replacement computers have limited battery life barely exceeding 3 hours. This is because the hardware is not optimized for efficient power usage.

Notebooks have really become very popular computer hardware. Tips for International Travel

International travel has a few extra rules to follow. To insure a quality travel experience and to avoid trouble, know these tips.

Always bring your ATM card with you. You will be charged a transaction fee by your bank each time you withdraw cash from an ATM machine, but this is your best bet. Just remember to withdraw a few larger amounts as opposed to daily, smaller amounts to avoid numerous bank charges. Most banks charge $1.50 - $5.00 per transaction. Also, depending on the kind of ATM card you have, you may be able to use it in restaurants/stores if the place of business accepts Visa or Mastercard.

When used as a credit card, it will automatically come out of your checking account. In this case, you won't be charged the bank's normal transaction fee. You must remember that many small villages do not have ATM machines, so plan accordingly. Never go to the exchange store fronts on the street or you will be charged a hefty fee. Also, you should bring the name and phone number (the direct line) of your banker just in case you need funds made available while abroad.

Credit cards are another good option since you will get that current day's exchange rate when you receive your bill upon your return home. Credit cards are widely accepted at hotels, restaurants and shops. It is a good idea to bring two different types (Visa or MasterCard and American Express) in case one is not accepted. Keep in mind that most credit card companies charge an additional fee for using credit cards internationally which is usually between 2-3% so check with your credit card company prior to your departure.

Bring more film than you think you will need since film is usually more expensive overseas. Always check the expiration of any film bought overseas.

Bring your passport and make sure it hasn't expired. Before departure, make a copy of your passport and airline tickets and keep in a separate place.

In Italy, you can also change money in the Italian Post Office. They often have better exchange rates and are open Saturday mornings.

I do not advise bringing traveler's checks. I have found that many restaurants and stores do not accept them because of currency fluctuation but you can exchange them at hotel front desks and banks.

Always bring comfortable, "already-broken in" footwear. Don't make the mistake of bringing brand new shoes! Never bring high heels - they will certainly get stuck in the cobblestones in the small villages. Remember, many of these European villages are very hilly with rocky textures.

Before I pack, I make a habit of checking the weather forecast of the country to which I will be traveling. Also, I bring a light jacket and a small umbrella.

For those die hard shoppers, always bring an extra, collapsible suitcase for those precious purchases. You dont want to break your new possessions by placing smashing them into your packed suitcase.

Expanding on the previous note, if you wish to purchase art/home decor while away, always bring the measurements of that area of your home (i.e. table measurements for tablecloths, bed measurements for linens, etc.)

Don't forget your laptop hardware, chargers (for cell phone, digital camera, etc.) and converters (hairdryer, electric shaver, etc.).

If you don't have a cell phone, remember to bring your home telephone company's Access Codes to be sure you get the best rate in calling home. (Each country has a different access code so call your phone company).

If you want to check your email while away and don't have a laptop, remember to bring your email access website information (i.e. www.mail2web.com - you will need your username and password). I always bring my Blackberry to Europe since the service provider has international access. Also, bring your address book - you may want to send postcards!

Laundry services are very expensive overseas so if you want to pack lightly, bring some Woolite to rinse out clothes in the sink. Also, make sure you bring an extra pair of sunglasses.

To avoid over packing, check with your hotel to see if they have a hairdryer and an iron/ironing board.

Always pack a swimsuit - even if it's winter, you'll never know if there might be a heated pool or Jacuzzi!

Use village names as landmarks as opposed to route numbers. By taking these precautions and preparations, you can spend your international vacation enjoying yourself and the surroundings without worrying about the little things.

How to Observe Wildlife without Leaving Home

While lumbering herds of elephants and stalking Bengal tigers capture the imagination of most animal lovers, we often neglect the nature closest to us. Sometimes we need a reminder that we are part of a habitat, and that the miracle of life exists under our very noses. Educator and naturalist Carolyn Duckworth has said, If you want to understand and become connected to your environment, keeping a field journal is one of the fastest ways to accomplish this goal.

Studies have found that children today consider nature to be somewhere elseon TV, videos, in the National Geographic only. But in reality, a genuine connection to wildlife around the globe is only an extension of a connection to the earth right where you stand. Good naturalists dont gain their knowledge from formal schooling, they get it in the field, by direct observation. And this observation can start right in your backyard or at the park down the street.

This article will offer pointers for keeping a nature journal. It draws heavily on the program laid out in the book Keeping a Nature Journal: Discover a Whole New Way of Seeing the World Around You by Clare Walker Leslie and Charles E. Roth.

The tools needed to start nature journaling are simple and inexpensive. One needs a notebook and something to write with. Experimentation will reveal your personal preferences for lined or clear paper, binding type, size, and lead or ink. As you gain experience you may add a small set of watercolor paints or colored pencils. If you use pencils you may need a sharpener, or you can use mechanical pencils, which yield more technical-looking drawings. You may also use a collecting bag for objects that you want to draw and study indoors. (Although you should collect only fallen objects, where permission is given).

There are no hard and fast rules for nature journaling, although entering observations using a heading is good practice. For your heading you may include your name, the date and time (it doesnt have to be an accurate clock time), the place, weather conditions, your first impressions, wind direction (use a compass for this), and cloud patterns and cloud cover.

To get started you may find this sequence of observations helpful, as it gets you in the habit of observing all around you:

Start by looking at the ground. Get a close up view of individual objects. Try to draw one or more in your journal, labeling each item. Take no more than five minutes per object, and give size measurements (you dont need a ruler, just estimate.) For further learning, try writing at least one question about each object.

Now stand up and draw what comes into view at eye level. Label the object and describe what its doing, or what it is part of.

Look up from where you are standing. Record what you see above, and how it makes you feel.

Nature journals are not just for artists. Dont worry if your renderings look like scribbles. The point is that you are connecting to your environment.

Some questions you may use to direct your journaling, and deepen your connection to the life around you are:

What are the trees in my neighborhood? When do they bloom? What do their fruits and seeds look like? What insects use the trees? When do they shed their leaves? How do their seeds get to new sites to grow?

What birds live in my neighborhood? What is their activity at various times of the day? How do different species of birds interact with each other?

What kinds of insects gather around the light at my doorway each night throughout the year?

When and where do mushroom species appear in my neighborhood?

Using questions like these you may find yourself discovering both the landscape you live on, and the landscape that lives in you. Those who keep a journal know that journaling is a form of journeying, and a well-kept journal can become a treasured record of where we have been, what we have seen, and what we have felt as weve interacted with the world.

You dont have to visit the glaciers of Alaska, or Indias jungles, or the savannahs in Africa to connect to Mother Earth, although who of us wouldnt jump at the chance? Start by putting roots down right where you stand.

It seems only natural that we should value most what we are in contact with everydayyet the reverse is often true. We appear to place a higher value on rare animals and plants and spectacular views and far-flung places. Of course both are important because they fulfill different needs. Laundry - The Neverending Story?

Laundry can be a huge time sucker and it's the task many Moms dread most. It doesn't have to be this way. Here are some tips to help you tame the laundry beast.

Minimize

Minimize the amount of laundry you do by creating new standards of "dirty". If you wear a pair of jeans for two hours then put on your shorts, are the jeans dirty? Not in my house. Pajamas put on a clean body at night after a bath and worn once aren't dirty either. Ditto for a towel that blots a freshly scrubbed body. Teach your kids that dirty means it has food or obvious dirt marks on it. The exception? Underwear of course!

Minimize sorting by putting a hamper in each bedroom that has 3 slots. One for whites, one for darks, one for mixed colors. For kids that are very young, try cutting out a large circle from construction paper for each category. Tape these on the wall above the hamper to show where to put each color. Alternately, you could buy inexpensive colored bins that match laundry colors.

Train your kids to bring you their dirty laundry at the beginning of each day or at some other time you choose. Don't turn socks right side out for laundering. Show your family members how to take off their socks without bunching them into an inside out ball. If they don't choose to listen to your sock lessons, let them turn their own socks right side out.

You may be able to minimize sorting even more by washing more clothes together. Many times light colors can go into the wash with mixed colors if you use cold water and the items aren't brand new. Typically only cheap clothing fades anyway so buy your kid's clothing from the nicer stores. It will last longer and wash well.

Some important questions to ponder: Do underwear need to be "folded" or can they be neatly placed flat in drawers? What about small T shirts and shorts? Do socks need to be matched up or can they be thrown into plastic boxes in a drawer and matched up by the wearer? Important questions, these!

Delegate

In some homes, the person who dirties the laundry is responsible for taking the laundry to the washing up area. If clothing doesn't make it there (meaning it's stuffed under beds, in corners of closets or otherwise lying on the floor), it doesn't get washed. Natural consequences work well for laundry. The first time your daughter doesn't have her favorite shirt that she just has to wear to the mall, she'll remember to get it to the laundry room. When hubby has no boxers, he may be motivated to get them in the hamper too. Developing "laundry on the floor blindness" is helpful for a Mom!

Older kids can be taught how to use the washing machine and dryer. Kids ages 2 and up can help with folding and getting clean laundry to their dressers. Even a toddler can "match corners" to fold washcloths and put their undies and socks in dresser drawers. Most youngsters think folding laundry is fun. Keep this myth going with them as long as humanly possible!

Don't Procrastinate

Some tasks don't take longer to complete if you procrastinate a bit. Vacuuming, for instance, takes roughly the same amount of time to complete whether you do it daily or weekly. Laundry is not one of these chores. Doing a load of laundry a day is preferable to tackling a mountain of dirty clothes that have set in stains, bad odors and maybe even mildew. Be sure to finish the job completely- putting the load into the dryer quickly so the clothes don't sour. Then remove from the dryer promptly for folding so they don't wrinkle.

As long as we continue to eat, sweat and move about, we'll have to deal with laundry. Hopefully these tips will help you spend a little less time dealing with the repercussions of being human!

Leaving the hype aside, here are four down-to-earth techniques that will enable you to obtain cheaper traffic from almost any of your Google AdWords campaigns.

1. Combine an Increase in Keywords with a Lower Bid

One of the best ways to get more traffic from your Google AdWords campaigns is to add more keyword phrases in conjunction with lowering your pay-per-click bids. By doing this you can end up drive much more traffic through your campaign at a lower price per visitor.

Make sure that the new keyword phrases you add are still very relevant. I bet you can still find plenty more relevant keywords if you think carefully. Many advertisers initially set up a new campaign with a bunch of keywords to test it out, and then they forget to come back later and add more relevant keyword phrases. You can find many more relevant keywords using the free software, Good Keywords, or even Googles own Keyword Tool. I like Good Keywords Phrase Builder as it enables you to build lists of hundreds of keyword phrases in seconds.

2. Use Phrase or Narrow Match

Try using phrase match or narrow match for your keyword phrases. The reason you should try this is that narrower keyword phrases do not always trigger the same minimum bids at AdWords and therefore you can get traffic cheaper.

Often when Ive been unwilling to pay the minimum bid on broad match for a keyword phrase, I have been able to get it showing quickly by using phrase or narrow match.

The best thing about this technique is that your traffic is will be even more targeted because of the matching so it will most likely convert better, and all the time it costs you less than the broad match would have

3. Advertise in Other Countries

North America is an excellent geographical target area for many campaigns, but it also very much more competitive to get traffic when compared to other regions. Try targeting a few other countries that may be interested in your product or service. I can think of one particular campaign where I simply cannot get North American traffic for under $0.05 per click, yet I still get loads of traffic from parts of Europe for $0.01 per click.

4. Use a Keyword Research Tool

If you spend a considerable amount on pay-per-click advertising you should really be using a professional keyword research tool. A good keyword tool like Keyword Elite will enable you to quickly research good keyword phrases that have less competition.

And less competition means you will pay less for your traffic if you bid on those keywords.

Philadelphia Schools Gains New Institute For Teacher Diversity

The Philadelphia schools need to improve the effectiveness and diversity of their teacher workforce. Currently, 85 percent of their students are African American, Latino and Asian, but they have only 38 percent teachers of color.

After discussions initiated by Congressman Chaka Fattah with School Reform Commissioner Sandra Dungee Glenn, Philadelphia schools secretary of education, President and CEO Dr. Sharon Robinson of the American Association of Colleges for Teacher Education (AACTE), and the AACTEs Vice President M. Christopher Brown II, a resolution to the Philadelphia schools diversity problem was conceived.

Fattah, Philadelphia schools officials, and other partners in a joint news conference officially launched the Dr. Ruth Wright Hayre Urban Teaching Institute in April 2006. The institute is supported by the AACTE and Temple Universitys College of Education, and operated by the Philadelphia schools. Its purpose is to train student teachers as urban classroom specialists, who will then be recruited into full-time teaching positions with the Philadelphia schools.

The ground-breaking institute will recruit college students from 700 of the best teacher training colleges across the nation. They are looking for the best and the brightest future teachers, who already are committed to making a difference in urban education. Though they will begin with 20 to 30 teachers this fall, the goal is to prepare up to 100 student teacher fellows each year for urban teaching positions within the Philadelphia schools. At least 50 percent of these teachers will be of color.

In addition to the urban classroom training, the institute will provide:

Improved pass rates among teachers of color on the Praxis exam through a test preparation initiative. The exam is required for teacher certification.

A cultural proficiency program to assist teachers to connect their classroom instruction with the students diverse cultural experiences.

Cultural proficiency standards have been proposed for use in evaluating Philadelphia schools educators.

A teacher diversity advisory council will advise the Philadelphia schools on its teacher diversity initiatives, and will consist of community-based partners.

The Philadelphia schools and Fattahs office will provide funding, with the Congressman pledging to secure grant money for the institute. Marketing efforts have been focused on teacher recruitment from universities with large African American and Latino enrollments in nearby states and Puerto Rico.

The institute is named for the outstanding Philadelphia schools educator, Dr. Ruth Wright Hayre (1910-1998). Hayre was the first African American to teach full time in the Philadelphia schools, the first African American senior high school principal in the Philadelphia schools, and the first African American and female president of the Philadelphia schools board of education. She won numerous awards locally and nationally, and co-wrote Tell Them We Are Rising: A Memoir of Faith in Education with Alexis Moore and Ed Bradley. Hayre exemplifies what the institute stands for diversity and quality teachers. The institute fulfills Fattahs belief that you dont have to sacrifice diversity to have quality in the Philadelphia schools.

Too many people have been screened and labeled with a false diagnosis (1). Far too many have died from the use of psychiatric drugs which were prescribed after they agreed to be screened. Antidepressant drugs carry FDA-mandated warnings stating that taking them could cause increased suicidal thinking and behavior (2). Many psychiatric drugs are known to cause violence, hallucinations, addiction, heart attacks and sudden death. (3)

Dr. Whitaker stated, Psychiatry is not science; its observations of human behavior, without any scientific backup. For example, diagnosing someone with a chemical imbalance is a fabricated diagnosis. They have no evidence whatsoever of any chemical imbalance. They cant measure it; they cant find it. So, theres no chemical imbalance thats measurable.

Dr. Whitaker also said, referring to the list of mental disorders, ...psychiatric evaluations arent based on science period! Theyre just made up, and the Diagnostic and Statistical Manual is growing with more and more fabricated mental illnesses. Pretty soon, were not going to find a normal person anywhere in the countryunless theyre drugged.

The dictionary defines depression as sadness; gloom; dejection. It is an emotion, a feeling, not a disease. Psychiatry has preyed upon peoples emotions, turning these feelings into a fabricated illness to get more people into profitable psychiatric treatment.

Depression is really only a symptom of a physical disease or some other condition, such as loss of a loved one, brain tumor, vitamin deficiency (5). People who submit to screening on Oct. 5th are taking a great risk because they are not being tested by medical doctors for any possible physical condition or genuine disease that could contribute to certain behavior. Depression is listed as one of the symptoms of several physical diseases or conditions. Someone who is screened and told (fraudulently) that their symptoms are caused by a depression disorder are not then likely to seek out true medical care. This could prove very dangerous since an undiscovered physical disease left unhandled could be fatal.
